recipe: creamed corn

This is an adaptation of a recipe I got from Kraft Foods last year. I don’t like typical creamed corn (It’s sweet – ick!), but the taste of this, thanks to the cream cheese, works for me! I made it for Christmas dinner last year and will do the same again this year. Yum!

What You’ll Need …

2 oz. (1/4 of 8-oz. pkg.) Philadelphia Cream Cheese, cubed
2 Tbsp. milk
1 can (14-3/4 oz.) cream-style corn
1 pkg. (10 oz.) frozen corn, thawed

What You’ll Do …

  1. Heat cream cheese and milk in medium saucepan on medium heat until cream cheese is melted, stirring frequently.
  2. Add cream-style and thawed frozen corn; stir. Cook 4 min. or until heated through, stirring occasionally.
  3. Transfer to serving dish or crock pot to serve. (Christmas dinner at my house is buffet-style, so it goes into the crock pot to keep it warm until it’s time to eat!)

Note: Serves 6.

recipe: mocha crackle cookies

We recently had a cookie exchange lunch in my office, and my challenge was to make 10 dozen award-worthy cookies. Being the thinker that I am (Ha, yeah right!), I searched for a recipe that would yield at least half the required 10 dozen so I could make no more than two batches instead of something that made 2 dozen … of which I’d end up making five batches! I narrowed the options down to half a dozen or so good large-yield candidates, and ended up choosing the below detailed Mocha Crackle Cookies (courtesy of Taste of Home’s Best Loved Cookies & Bars). They’re pretty good, particularly for the coffee lover. Oh, and did I happen to mention that they won the prize for “Best Looking?” Not too shabby! Enjoy!

What You’ll Need …

1/2 cup butter, cubed
5 squares (1 ounce each) unsweetened chocolate
1 tablespoon instant coffee granules
4 eggs
1/8 teaspoon salt
1 cup sugar
1 cup packed brown sugar
2 cups plus 3 tablespoons all-purpose flour
2 teaspoons baking powder
1/3 cup confectioners’ sugar

What You’ll Do …

  1. In a microwave, heat the butter, chocolate and coffee until chocolate is melted; cool slightly.
  2. In a bowl, beat the eggs and salt; add sugar and brown sugar. Stir in chocolate mixture; mix well.
  3. Combine flour and baking powder; gradually add to egg mixture to form a soft dough. Cover and refrigerate for 2 hours or until easy to handle.
  4. Roll dough into 3/4-in. balls. Roll in confectioners’ sugar; place 2 in. apart on greased baking sheets. Bake at 350° for 12 minutes or until set.
  5. Remove to wire racks to cool.

Note: Recipe yields approximately 5 dozen cookies.

I try my best to keep up with a mix of more than 50 blogs. Sometimes it’s easier than others, but I can often skim and find posts that relate or pique my interest at the time and catch up on the others later. If you’re asking yourself what on earth I’m reading, it’s a mix of things: blogs kept by friends and family, marketing, photography, pregnancy, food, creativity, news, scuba, crafts, religion … a truly eclectic mix.

Just a few minutes ago, I was perusing my RSS updates for today (I use NetNewsWire by NewsGator.), and came across something that so perfectly fits what’s about to happen on Thursday night that it’s chilling. The post was from “Oh Joy!,” a blog I follow for creative inspiration and unique ideas. Today’s post featured the work of Yulia Brodskaya, a Russian artist and graphic designer who currently resides in London. Her work has a softness to it that I love, and her paper graphics are awesome! One such paper graphic was featured in today’s Oh Joy! post, and I want to share it with you.

tell Yulia, I couldn’t agree more. The magic IS in the telling, hence the reason I’ve made such a huge deal about revealing the gender of this baby. I know it’s something simple to so many people, but to me, it’s magical. For starters, I love surprises and am rarely ever surprised. This is one of the greatest opportunities of all to give myself the surprise of a lifetime in a grand, bold way. Second, life has so few amazing moments. Why not take opportunities to celebrate the “small” things along the way? Finally, I am getting so much enjoyment out of watching people who want to know squirm!

Believe me, it is killing me to know that the answer is sealed in that envelope and could be just moments away. But the thought of opening it with our families far outweighs the frustration of this suspense. Our family members will have the joy of seeing our faces when Justin and I open it, and we’ll have the pleasure of seeing theirs … once we finally decide to show them! (Hope you didn’t think we were just going to tell the second we read it! Ha ha ha!)

I don’t want the memory of us finding out whether this baby is a boy or girl to be in a hospital looking at the sonogram screen. I don’t want to tell our parents and siblings over the phone. Instead, we’ll make a special memory out of this, complete with laughs, maybe tears, and plenty of photos!

The more I talk about it, the more excited I get! Aaah! I can’t wait for Christmas night, when the magic will truly be in the telling.

I’ve been battling the death cold and it’s been miserable!!! Otherwise, though, all is well!

Your pregnancy: 18 weeks

How your baby’s growing:
Head to rump, your baby is about 5 1/2 inches long (about the length of a bell pepper) and he weighs almost 7 ounces. He’s busy flexing his arms and legs — movements that you’ll start noticing more and more in the weeks ahead. His blood vessels are visible through his thin skin, and his ears are now in their final position, although they’re still standing out from his head a bit. A protective covering of myelin is beginning to form around his nerves, a process that will continue for a year after he’s born. If you’re having a girl, her uterus and fallopian tubes are formed and in place. If you’re having a boy, his genitals are noticeable now, but he may hide them from you during an ultrasound.

Week 18 of Pregnancy: Fetal Nervous System

At 18 weeks pregnant, your baby is hitting the height chart at five and a half inches long (remember, that’s crown to rump) and weighs about five ounces (the weight of that boneless chicken breast you’re making for dinner).

And now for the skill of the week (drum roll please…): The art of the yawn has been mastered by your baby (someone’s sleepy!). In fact, you might catch a glimpse of that adorable yawn if you’re getting an ultrasound this month. You’ll also catch a glimpse of all the fetal movement your baby’s doing — twists, rolls, kicks, and punches. And would you believe your baby is finally big enough for you to start feeling those movements now (or anytime in the next few weeks). So get ready!

Something you won’t see on the ultrasound, but you’ll know is in working order, is your baby’s nervous system, which is maturing rapidly at this time. Nerves, now covered with a substance called myelin (which speeds messages from nerve cell to nerve cell), are forming more complex connections. And those in the brain are further specializing into the ones that serve the senses of touch, taste, smell, sight, and hearing. Talking about hearing, your baby’s is growing more acute, making your little one more conscious of sounds that come from inside your body (which means you could both be listening to each other hiccup — a skill that your baby has by now).

I’m still battling the death cold!!! The only good thing is the distraction of this week’s fun appointments. Yippee!

In other happy news, I think I’ve officially confirmed that these “twitches” I’m feeling are that little person in there doing backflips and such. Pretty cool! It’ll happen a few times a day and I love it! I just can’t wait until Justin can feel it, too.

I’m still waiting for the second trimester energy. My goodness, I have SO much to do before Christmas, and have absolutely no motivation to do anything! It’s horrible!

Your baby’s sensory development is exploding! Her brain is designating specialized areas for smell, taste, hearing, vision, and touch. Your baby weighs about 8 1/2 ounces and measures 6 inches, head to bottom — about the size of a large heirloom tomato. Week 19 of Pregnancy: Vernix Develops

Six inches long this week and about eight ounces in weight, your baby is the size of a large mango.

Your little action figure is able to choreograph Matrix-like moves at 19 weeks pregnant. Arms and legs are finally in proportion, neurons are now connected between the brain and muscles, and cartilage throughout the body is turning to bone. All these upgrades combine to give your baby more control over limb movements. Which explains all that kicking, stretching, and bodysurfing (or rather bellysurfing) you’ve possibly started feeling by now.

Something else going on this week: Your baby is getting a cheesy varnish. Say what? Yup — a protective substance called vernix caseosa (vernix is the Latin word for varnish; caseosa is cheese) now covers your baby’s skin. It’s greasy and white and is made up of lanugo (that downy hair), oil from your baby’s glands, and dead skin cells. This waxy “cheese” may not sound too appetizing or attractive, but it’s there for good reason: Vernix protects your baby’s sensitive skin from the surrounding amniotic fluid. Without it, your baby would look very wrinkled at birth (sort of what you’d look like if you soaked in a bath for nine months). Some babies — especially those born early — will still be covered with vernix at the delivery, so you might get a look at your baby’s first anti-wrinkle cream.

… YEAH RIGHT! I don’t think so! You should be ashamed of yourself, thinking that (1) I know the gender, and (2) I’d tell so easily!

As you may know, we had our detailed anatomy sonogram yesterday morning at 9 am. Justin and I arrived at the hospital around 8:45 and as we walked in, were amused by the sound of jackhammers pounding away on the building. Seriously? Anyway, we made our way up to the second floor, where the Center for Maternal & Fetal Medicine is located. After registration and the donning of a snazzy hospital wristband, we waited in the Labor & Delivery waiting room until they were ready for us. There were two families there; one gal had been in since 8:00 the previous evening, the other was prepped and ready for a c-section at 9:00 am. As we waited, it was fun to listen to their conversations about the babies on the way! (Note: It was also creepy to think of our families sitting there waiting for me to hatch. Everyone’s out there all cool and casual while these women are going through some serious stress and pain! Gee, I can hardly wait until May! Ha ha!)

18w4d_profile We only waited 15 minutes or so; good thing, because Justin was falling asleep and I wasn’t far behind him! To kick things off, our sonographer was looking at the baby’s internal organs … stomach and kidneys. I can’t remember in what order everything came, but we saw the shins, femur, and both sections of the arms. Both the feet and hands were cool, as was the spine. The four chambers of the heart were easy to see, and were particularly cool when she showed the blood pumping through using doppler. The brain was also fun to look at. We saw both a profile of the face and looked at it straight on (Pictures included!). As we looked at the profile, the baby put its thumb to the mouth, but couldn’t quite get it in! We then saw the mouth open and close, followed by him/her trying to get that thumb in again! It was awesome! She looked at lots of other things, too, like cross-sections of the vertebrae and the all important piece of “anatomy!” No, neither of us caught it, so we’re still in suspense!

18w4d_straight_on At this point, our little bubble weighs 9 oz. and its heart is beating at 153 bpm. End result: all looked good, with nothing indicating any sort of detectable defects. We talked to Dr. Neale about everything before heading out.

Later yesterday afternoon, I had my usual appointment with one of the midwives. I really liked the midwife I met yesterday; she’s very down-to-earth and friendly. Her guess as to the gender? Though it’s not scientific, based on the baby’s heart rate that was in the 150′s that afternoon, she’s guessing it’s a girl! BTW, I love hearing that sound!

So, as of now, all’s well! The bubble is on target as far as growth is concerned, and all looks good. Now, if only I could get rid of the death cold, I’d be alright! Today is day 12 of this thing and I have had e-n-o-u-g-h! Luckily, I think I’m ready to make the move back to bed at night and can stop sleeping on the couch. We’ll see how that goes tonight!

As mentioned in a previous post, we sent a link to an “announcement” slideshow to friends & family members who have yet to find out we’re pregnant. Well, last night brought an awesome surprise as a result of the slideshow! The first friend to find out via the slideshow had equally exciting news to share … she and her husband are expecting on June 11th! I won’t mention her name or even how I know her, as she has yet to share her news. All I’ll say is that she’s a very dear friend. I’m so incredibly excited for them; I can’t even begin to tell you what joy this has brought to me! It’s way more exciting to hear this awesome news from a dear friend … oh my! Friend & husband, I wish you all the happiness as you travel this journey. I’m so excited we’ll be able to share with each other along the way!

I’ve had a serious “death cold” for 9 days now, and it’s only getting worse. Out of desperation, I decided to consult my “safe drugs while pregnant” list again today, hoping there was something I missed as I skimmed it a week ago. I’m so glad I’ve got google as my translator, because there’s no way I’m understanding my choices from this list:

  • pseudoephedrine
  • dextromethorphan
  • guiafenesin

Tomorrow morning, we go for our detailed anatomy sonogram. Sheesh, I couldn’t be more psyched! We’ll get to see our little person again, and s/he will be a bit bigger this time than last! Yippee!While I am psyched, I’m also about 3% nervous. I guess I’m already on edge about the whole cystic fibrosis thing (About which I’ll write in a minute!), and the purpose of this sonogram is to rule out any birth defects. Like I’ve said before, what will be will be. Unfortunately, that doesn’t make it any less scary.

About the whole cystic fibrosis thing. Justin called his doctor’s office on Friday to see if they had the results of the cystic fibrosis screening as I’ll need to know for my appointment tomorrow afternoon. They went to look his information up in their system by his birth date … and he wasn’t in there! They then searched for him by SSN, and found him. Well, unfortunately, they’re now missing his file. That’s just stinkin’ great! My appointment with my midwife is tomorrow afternoon at 1 pm, so they’ve got less than 24 hours to either find it or call the lab for the results. This is strike two with his new doctor and her office, and so far, I must say I’m so unimpressed.

People are in complete disbelief that I think I’ll be able to keep my “bubble reveal” envelope sealed until Christmas. Seriously, my friends, I LOVE surprises, suspense, and the thrill of a well planned and thought out moment. Do I want to be in a hospital when I find out the gender of my first-born child, or surrounded by my friends and family in my home on Christmas, a day that already carries more meaning than any one of us can even imagine? Do I want to make a phone call saying, “It’s a s/he!,” or exchange excitement as our family members see our faces when the gender is revealed and vice versa when Justin and I get to see their expressions when we show them? I’m all for the moment. Sure, I’ll want to open it, but even more, I’ll want to spend these exciting moments with the ones who matter most. Believe me, I’ll wait!

label Well, we’ve got lots of friends and family members that we have yet to tell. It’s completely my fault, and wishful thinking on my part. I don’t like the idea of telling people over the phone or e-mail, mostly because there’s just no fun in that for either of us! At this point, however, I’m realizing that it’s just not possible for us to get around to everyone to tell them in person. My goodness, I’m already 18 weeks and some very important people still don’t know! (I’m an idiot, and do sincerely apologize! I have such grand ideas …)

Eh. Much like last Friday’s episode, I’m now getting sick after sneezing and coughing. Yeah, imagine that. Life’s a hoot; one bag of laughs after another.

Your pregnancy: 17 weeks

How your baby’s growing:
Your baby’s skeleton is changing from soft cartilage to bone, and the umbilical cord — her lifeline to the placenta — is growing stronger and thicker. Your baby weighs 5 ounces now (about as much as a turnip), and she’s around 5 inches long from head to bottom. She can move her joints, and her sweat glands are starting to develop.

Week 17 of Pregnancy: Baby’s Body Fat

How big is your baby at 17 weeks pregnant? About five inches long and more than three and a half ounces — the size of your open hand. (Open the other one too and imagine your baby cradled in both your arms right after delivery!) Body fat (baby’s, that is) is beginning to form and will continue to accumulate through the end of your pregnancy. By the time your baby is born, body fat will make up about two-thirds of his or her weight (and will make all those chubby parts especially yummy).

Your baby is almost certainly listening up by now. In fact, loud noises — the dog barking, the doorbell ringing — will actually startle your baby (and also get him or her used to such noises; for instance, fetuses who regularly hear a dog barking will become babies who sleep right through Fido’s outbursts). Your baby’s eyes (which have fortunately finished their migration to the front of his or her head) are making small side-to-side movements and can even perceive some light, though the eyelids are still sealed. And since practice makes perfect, your baby is sharpening his or her sucking and swallowing skills in preparation for that first (and second…and third) suckle at your breast or bottle. In fact, most of the survival reflexes that your baby will have at birth are being perfected in utero right now.

And here’s some proof that your baby is truly one of a kind (as if you needed any!). Within the next week or so, the pads on your baby’s fingertips and toes will become adorned with completely individual swirls and creases (aka fingerprints).
